Belated Post : Ryan-Jay and Kai Nee's Birthday Bash 2012

Believe it or not , I have been planning for this since months ago . Thanks to my demanding job, I was not able to start anything until the very last week . Gosh , you won't believe this. I have been on OT for the whole week till the event day . I was basically a walking zombie when I was at work the next day ... LOL ... Well for the love of my baby , I am happy to do it all for him of course...
Check out baby's chubby and cute little good friend . Both babies were born on the same day , at the same hospital. We , mommies , keeping in touch all this while and have decided to throw them both a Birthday Party . How sweet is that ... Best part is when I have to handmade most of the decoration stuff . Special thanx to our creative director Tracy Taw for cracking her head , helping me up with the decoration . Well , its all worth the effort for these two lovely babies .

Bake Along #31 : VANILLA PEANUT BUTTER WHOOPIE PIES

It's time again for me to celebrate  , oops , I shall say its time again for me to spare some precious time to bake along with my blogger friends. They are simply awesome. For this round of bake along , everyone is going to bake Whoopie Pies. To be honest , I have not heard of Whoopie Pies before .. Man........... that's kind of embarassing to tell ... LOL .
I have chosen to bake a simple version of whoopie pies. Vanilla Peanut Butter Whoopie Pies sounds simple to me .. heehee. Verdict : My niece love this very much and she actually packed this to be her breakfast . Yippee... She says " Ah yi ( aunty in chinese )  , why are you baking Dorayaki? I didn't say I wanna eat Dorayaki ... ".  Dang.... LOL...

Vanilla Peanut Butter Whoopie Pies 
( Vanilla Whoopie Pies recipe adapted from Can You Stay for Dinner )
Ingredients 
265 g     All-purpose flour
1½ tsp   Baking powder
½ tsp     Salt
120 g     Butter, at room temperature
1 cup     Sugar
2 large   Eggs
½ cup    Buttermilk
2 tbsp    Milk
1 tsp      Baking soda
1 tsp      Vinegar
2 tsp      Vanilla extract

Method 
1.    Preheat oven at 190C. Line baking tray with parchment paper
2.    In a medium bowl, whisk flour , baking powder and salt till well combine .
3.    Cream butter and sugar till light and fluffy . Add egg and buttermilk , mix till well combine
4.    In a separate bowl, combine milk , baking soda and vinegar .Stir into the above batter with a wooden
       spoon .
5.    Add in flour mixture and mix on low speed until just incorporated.
6.    Stir in Vanilla Extract and make sure there are no more lumps
7.    Pipe batter on parchment paper and bake in preheated oven for 10-12 minutes .
8.    Remove from oven and leave to cool for 2 minutes before removing to a wire rack to cool completely .
9.    Fill one side of the whoopie pies with peanut butter filling and top with another . Voila.... Enjoy !!!

For the Filling :
100g       Cream Cheese , at room temperature
1 cup      Creamy Peanut Butter
1/2 cup    Icing Sugar
45g         Butter , at room temperature
3-4 tbsp  Milk

Method 
1.   Beat cream cheese till smooth , add in peanut butter and butter . Continue beating till smooth .
2.   Add in icing sugar gradually to reach your desired consistency . Add in milk if necessary .

Love At First Bite ........ Hokkaido Chiffon Cake

Well my new job is really making me go nuts at time. I gotta apologize for my being MIA , even though this is not my first MIA, [ LOL wink wink ], I am pretty sad when I have to put aside my baking and all for my job. Baking is joy for me actually . I miss lots of events which I myself have lost count . Finally , last night I have my own time to bake cake...... At last....................
 It was really love at first bite. Instantly fell in love with this Hokkaido Chiffon Cake when I first ate this at one of the blogger's gathering. It was simply irresistible. All thanks to Veron from Quay Po Cooks for bringing us such a lovely dessert . I simply can't take it off my mind all this while. LOL............. Dang.......... I was lucky , last night , baby was behaving well, that's when I was actually fit to bake again after a long break . Guess what ? ....
Baby love this . He finished one whole cupcake by himself right after I fill the cake with Whipped Cream. It's always fun to see him eat . Kids are always honest with food. Either they like it or they don't . They are adorable and cute especially when they appreciate our cooking... don't you agree ?
